Supported by the parents Nanou og Alain Barthélemy, Sebastien Vincenti bought the property in 1991. At that time he had finished his oenological education. The former owner had delivered the grapes to the cooperative and there were no cellars at the estate. 
During 1993-95 Vincenti worked at André Brunel at Les Cailloux in Chateauneuf du Pape. In the cellars here he made the first vintages from Fondrèche.

The domain covers 35 ha. of which 28 ha. are situated around the domain and the rest in Mormoiron. 

The vineyards are certified agriculture biologique since 2012.

Wines

Ventoux
2015: 50% Grenache, 40% Syrah and 10% Mourvedre. Aged for 12 months. 
1/3 in cement tank, 1/3 in foudres and 1/3 in oval cement tanks.
This vine will be made in the future in stead of the cuvées Fayard and Nadal.

Ventoux Persia
2015: 90% Syrah and 10% Mourvedre from the oldest vines of the domain.
Aged in barriques or foudres for 12 months.

Ventoux Il était une fois...
2015: 80% Grenache planted in 1936, 10% Syrah and 10% Mourvedre.
Aged in oval cement tanks or foudres for 12 months.
This cuvée is only made in some good vintages.

Ventoux Divergente
2015: Mainly old Syrah. Aged for 12 months in foudres.

Ventoux Rosé
2015: 50% Cinsault, 30% Syrah and 20 % Grenache.

Ventoux Blanc
2015: 30% Grenache Blanc, 30% Roussanne, 30% Clairette and 10% Vermentino. Fermented in barriques and then matured in tank for 6 months.

Ventoux Blanc Persia
2015:  Mainly Roussanne. 
Fermented in foudres and then matured in cement tank.

VDP Nature
2015: 30% Grenache, 30% Syrah, 30% Mourvédre and 10% Cinsault.
Bottled 6 months after harvest without adding any SO2.
