The founder of what became Clos du Mont Olivet was Romain Jausset the father-in-law of Seraphin Sabon, who
inherited what Jausset had bought of vineyards in Chateauneuf du Pape. His
son Joseph Sabon had three sons:
Jean-Claude, Pierre, and Bernard Sabon who ran the domain for a generation
with the company name Les Fils de Joseph
Sabon.
The young generation are now
running the domain. Thierry Sabon the son of Jean-Claude Sabon is responsible for the winemaking.
David and Celine the children of Pierre Sabon play their roles in
the vineyards and in the office.
The domain is now covering 21 ha of Chateauneuf du Pape,14 ha of Lirac,10 ha of Cotes du Rhone and
3 ha IGP.
As normal in Chateauneuf du Pape the vineyards are dispersed very much and
are situated at 15 different lieux-dits. The Cotes du Rhone
vineyards are situated to the north near Bollène and in Gard

Chateauneuf du Pape Le Petit Mont
2018. 95% Grenache, 5% Syrah. Matured in steel (80%) or
older barrels
Chateauneuf du Pape
2018: 75% Grenache, 10% Syrah, 9% Mourvedre, 6% Cinsault, Counoise, Vaccarese, Muscardin, Terret
Noir and Picpoul Noir. From 15 lieux-dits.
90% aged in 60-years-old foudres and the rest in barrels.
Chateauneuf du Pape La Cuvée du Papet
2018: 80% Grenache, 20% Mourvedre, 20% Syrah. From the oldest vines
at Montalivet, La Crau, Bois Dauphin and Pid de Baud. 40% destemmed.
Vinification in concrete. Aged in foudres or 3-years-old demi-muids.
Chateauneuf du Pape Blanc
2018: 40% Clairette, 15% Bourboulenc, 31% Roussanne, 10%
Grenache Blanc, 4% Picpoul, Picardin, Grenache Rose.
88% matured in steeltank. 12% in new or used barrels
Lirac Marie Jausset
2018: 40% Grenache, 10% Syrah, 50% Cinsault. 95% aged in foudres
and 5% in older barrels.

2018: 68% Grenache, 12% Syrah, 5% Cinsault, 5% Carignan. 50% matured in
concrete or older barrels.
Cotes du Rhone A Séraphin
2016: 50% Grenache, 40% Syrah, 10% Carignan. 60% destemmed.
70% aged in foudres, the rest in 1-5-years-old barrels
Cotes du Rhone Blanc
2018: 95% Grenache Blanc, 5% Ugni Blanc.
87% matured in steel tank, 9% in new barrels and 4% in used barrels.
Cotes du Rhone Rosé Le Rosé de Farel
2017: 90% Grenache (press direct) and 10% Syrah (saignée).
IGP Gard Conflues
2017: 95% Carignan, 5% Grenache. 55% laged in demi-muids
and 45% in barrels.
IGP Gard Rive Droíte
2017: 20% Carignan, 40% Grenache, 15% Syrah, 10% Merlot,
5% Mourvedre.
70% aged in foudres and the rest in barrels
VDF La Sabonité
Mainly Grenache, discarted from Chateauneuf du Pape
blended with other wine maybe from earlier vintage.
VDF Blanc Bohème
2016: 56%
Viognier, 44% Clairette, Bourboulenc, Roussanne, Picpoul Blanc,
Picardan. The 44% other varieties are second
press wine from Chateauneuf du Pape Blanc.
