Various sources report that in 1957 a deed was signed before a solicitor which concerneda plot of vines located in « ad montem Olivetti » but it wasn't until the begining of the XXth century that the association between the Sabon family and this locality was forged. Séraphin Sabon, a native of the the neighbouring village of Serignan du Comtat married Marie, daughter of Romain Jausset, landowner at Châteauneuf-du-Pape. In 1932 they created the « Clos Mont Olivet » Since then the domaine has passed through the hands of Joseph, eldest son of Séraphin and then his children. Today it is Celine, David & Thierry SABON the grandchildren of Joseph who manage the estate.
The estate extends to 21hectares in Chateauneuf-du-Pape, 14 hectares of Lirac, 10 hectares of Cotes du Rhone and 3 hectares of Vin de Pays du Gard. The various plots of vines belonging to the estate are very fragmented and come such localities as « Palistor » further to the north and encompassing, « Chemin de Sorgues », « Les Marines », « Le Moulin à Vent », « Les Parrans », « Les Cabanes », « La Font du Pape », « Coste Froide », « les Blachières », « Bois Seneseau », « Montalivet », « La Crau », « Les Bousquets », « Pied de Baud » and « Bois Dauphin ». The orientation of the vineyards, the local climates and the soils are all extremely varied (quartzite deposits, sands, mollasic sandstone, marine clay ….) and allows one to adapt the varietal to the particular plot or to play on the diverse expression of the samevarietal. For the red wines, it is the Grenache who reigns and is by far thedominant varietal. It is followed by Syrah, Mourvedre and Cinsault and putting in a guest star appearance are Counoise, Vaccarèse, Muscardin, Picpoul Noir and Terret Noir. Concerning the whites, there is no particularly dominant varietal. Clairette Blanche and Rose, Bourboulenc and Roussanne share 4/5 of the production with White Grenache, Picpoul Blanc and the Piacardan making up the rest. The parcels in AOC Lirac, Côtes-du-Rhône and IGP GARD, including vines located in the places called "Sainte Cardille" on the Commune of Orange, then GARD side in Saint-Laurent-des-arbres and Saint-Laurent. Genies-de-Comolas on the places called "Les Cosses", "Liqueurs", "Caveyrac", "Mont Cau", "Liqueurs", "La Coste", "Gissac", "Le Clau", which does not exclude heterogeneity of soils and mesoclimates. Grenache and Syrah share the majority of the vines joined by Carignan, Mourvèdre, Cinsault. The vines are cultivated following a reasoned and balanced method of viticulture....The major part of the vineyards are tilled and almost all the vineyards of Chateauneuf-du- Pape use sexual confusion methods to protect against pests and so avoid the use of insecticides.
Convey the diversity of the varietals and soils, channel the power of the Mediterranean sun to elaborate wines which have a definite southern character but without sacrificing elegance, such is the mission of the winemaker. Here there is no dogma. Observing the vines and the weather guide our decisions: the order in which the different plots are harvested, deciding to assemble the different plots and varieties in the same vat, de-stemming or not, lightly crushing the grapes before pressing or not..... The red wines are elaborated using gentle methods of extraction such as pumping over, separation of the liquid from the solid matter and re-combining them without ever seeking maximal extraction. Continual tastings during the vinification decides what needs to be done and the length of vatting. The fee run juice and the pressed juice are matured seperately in concrete tanks and assembled after some months and then kept in either vats, tuns or barrels. The percentage matured in each varies according to the vintage. The white grapes are harvested in the early morning and pressed with a pneumatic press. The juice is left for one night to separate the sediment before being put into one year old barrels (for the Roussannes) and stainless steel vats for the other varietals. The blending of the vats and barrels takes place just before the bottling. A malo-lactic fermentation is not sought after.

As autumn is drawing to a close and the wine presses have been washed and put away, the first wines tasted before being blended confirm what had been sensed: 2016 is going to be a fabulous vintage! And if some compare it to the magnificent 2010, some others do not hesitate to go as far as the famous star-vintage 1990… Either way, the evidence that we are witnessing the making of a great vintage is clearSOIL

WINEMAKING
The tanks are filled by gravity with a stalk of about 60%. The three varieties are fermented together and to create harmony from steeping. The wine is working without seeking maximum extraction but focuses more elegance and freshness. If during breeding, which begins in concrete tanks, other tanks are of interest initial assembly can be changed. For this vintage farming continued in wrath and half hogshead of 3 wines.

Exceptional in many aspects, 2017 witnessed weather records that led to an early and small harvest. The main characteristic of this vintage however is certainly the outstanding quality of the wines produced. Well balanced wines, rich and with beautiful silky tannins.

The grapes come from a varity of vineyard sites – Montalivet, La Crau, Les Blachières, Coste Froide, Bois Seneseau, Palestor, Bois Dauphin, Pied de Baud, Les Bousquets, Les Parrans, Les Marines, these localities extend of from the north to the south of the appellation. The orientation of the vineyards, the local climates and the soils are extremely varied (quartzite deposits, sands, mollasic sandstone, marine clay….) and allows one to adapt the varietal to the particular plot or to use the various expressions of the same varietal.
WINEMAKING
A partial destemming takes place and the vats are gravity filled. The wine is made avoiding maximal extraction, on the contrary the sought after qualities are elegance and freshness. The free run juice and the press juice are raised seperately, mainly in concrete tanks where they undergo their malolactic fermentation. After the final blend is made the wine continues to mature in big vats.

VINTAGE
« Ripeness and Balance »
One must go back several decades to find such a rainy spring. Fortunately, we were spared the traditional September equinox rain (5 mm only), thus allowing the wine growers to harvest in total peace of mind until late autumn. The 2018 Châteauneuf-du-Pape whites have been produced from grapes that presented excellent sanitary conditions, they are characterised by optimal ripeness and a nice length on the palate.
SOIL
The soils are mainly a clayey sand on south facing slopes. Localities: Montalivet, Le Chemin de Sourgues, Les Cabanes.
WINEMAKING
After being hand harvested, the grapes are crushed in full bunches. After letting the lees settle for one night the Roussanne is put into one year old barrels to ferment and the other varietals into stainless steel vats. The wine is raised on its fine lees. The final blending of the different vats/barrels takes place just before bottling. The malo-lactic fermentation is not desired.
Aging : 88% stainless steel vats, 6% new barrels and 6% used barrels

WINEMAKING
he vats are gravity filled with partial destemming. The wine is made without trying to have maximal extraction, on the contrary the sought after qualities are elegance and freshness. The free run juice and the press juice are vinified and stored separately, mainly in concrete tanks where they undergo their malo-lactic fermentation. After blending the wines are matured in stainless steel vats (80%) and barrels which have stored many vintages (20%).

CDR A Séraphin 2016
Our vineyard of Côtes-du-Rhône is situated in the North of Bollène in the limit between Vaucluse and the Provençal Drôme. Syrah of this wine is on the locality " Montueil ". Both the altitude of the vines and being surrounded by trees, created ideal conditions to avoid over ripeness. We blended it with Grenache from the lieux dits " Serre de Catin" & "La Levade" and some Carignan...
WINEMAKING
A partial destemming (60%) takes place and the vat is gravity filled. The wine is made avoiding maximal extraction, on the contrary the sought after qualities are elegance and freshness. The wine is kept in enamelled vats until the malo-lactic fermentation is finished and is then matured in big oak tuns (70%) and 1-5 year old barrels (30%).

Plots located in the town of Orange on the lieu-dit "SAINTE CARDILLE" and in the town of Saint Laurent des Arbres, right bank of the famous river « the Rhone » on the lieux-dits called « Gissac » and « Le Clau » . Terroirs of fine gray very rich in quartz grain, giving finesse and suppleness to the wine.

The free run juice and the press juice are raised seperately, mainly in concrete tanks where they undergo their malolactic fermentation. The final blending of the different vats/barrels takes place just before bottling. The malo-lactic fermentation is not desired.
Elevage : 87 % stainless steel vats, 9% new barrels and 4% used barrels.

Exceptional in many aspects, 2017 witnessed weather records that led to an early and small harvest. The main characteristic of this vintage however is certainly the outstanding quality of the wines produced. Well balanced wines, rich and with beautiful silky tannins.
SOIL
Vines located in the village of Saint-Laurent-des-Arbres et Saint-Génies-de-Comolas, right bank of the famous river « The Rhône » in the lieux-dits « Les Cosses », « Les Thez », « Liorgues » et « La Fressinède ». Sandy soil of Pliocène period and some plots with red silica mixed with Urgonian pebbles, This soil gives finesse and suppleness to the wine.

A partial destemming takes place and the vats are gravity filled. The wine is made avoiding maximal extraction, on the contrary the sought after qualities are elegance and freshness. The free run juice and the press juice are raised seperately, mainly in concrete tanks where they undergo their malolactic fermentation. After the final blend is made the wine continues to mature in big vat.
