For 15 years Jérôme Gradassi run a one Michelin star restaurant in Avignon. 
This was a very stressful job in the kitchen and with all the other things demanded of an owner of a small restaurant. He decided then to return to a more simple life and now he makes wine from the vineyards of his grand father's, Alphonse Mayard.

Until 2010 the property covered 3,3 hectares mainly with old Grenache vines. 
The first vintage from Jérôme Gradassi was 2004. Since 2005 a small amount (around 400 bottles) of white wine has been made. Later Jérôme' brother retired from his Domaine du Rempart, and since then Jérôme rents two ha of his vines He's now running 5 ha. He has moved to his brothers place (Domaine des Remparts) situated where Rue Alphonce Daudet meets Route d'Orange. 

Chateauneuf du Pape
75%-80% Grenache, 20- 25% Mourvedre. Aged in older barriques. 

Chateauneuf du Pape Blanc
100% Clairette Rose.
