The Sabon family has a long
history in Chateauneuf du Pape. Quote from the homepage of the domain: "One of the oldest documented landholders in Chateauneuf du Pape, the Sabon
family has controlled vineyards in the zone since 1540".
Roger Sabon founded the domain in 1953. He had 3 sons brothers of which the two
of them run the domain today Denis
and Gilbert Sabon. A third brother Jean-Jacques was part of this team
until he died a few years ago.
The vinification has since 2001 been in the care of Didier Négron, son-in-law of
Jean-Jacques Sabon.
Denis and his son Julien take care of the vineyards.
Delphine, daughter of Denis is often in the reception.
Today the property covers 18 ha of AOP Chateauneuf du Pape, 12 ha of Lirac,
6 ha of Cotes du Rhone and 14 ha VDF.

Chateauneuf du Pape "Olivets"
2016: 80% Grenache, 10% Syrah and 10% Cinsault.
Aged for about 15 months in foudres (40 hl), wooden tank (25 hl) or
demi-muids (6 hl)
Chateauneuf du Pape "Résérve"
2016: 80% Grenache, 10% Syrah and 10% Mourvedre. 60-75-years-old vines.
70% aged in foudres and 30% in demi-muids
for 16-18 months.
Chateauneuf du Pape "Prestige"
2016: 70% Grenache, 20% Syrah, 10% Mourvedre and 5% other allowed varieties. The
vines are more than 90-years-old. Matured for 16-18 months in foudres,
wooden tak or demi-muids.
Chateauneuf du Pape "Le Secret des Sabon"
2015: 95% Grenache and 5% other varieties in mixed planting
More than
100-years-old vines with a yield below 20 hl/ha.
It's matured for 12 months
in demi-muids, but as the name says, other facts about the wine is a secret of
the family.
Only about 2.000 bottles are made in good vintages and it's one of the most
expensive wines from the appellation.
Chateauneuf du Pape Blanc "Renaissance"
2017: 20% Clairette, 30% Grenache Blanc, 15% Bourboulenc and 35% Roussanne.
40-50
years old vines. Fermented and aged for 6-8 months in wooden tanks of 25 hl.

2017: 70% Grenache, 10% Syrah,105% Cinsault and 10% Carignan.
