1996-1998 Laurent Clapier got his wine education at the university of Montpellier and then he went home to work at the family domain which at that time was covering 32 ha. This property was known as Mas Theolas after Laurent's great grandfather Gabriel Théolas. The old American tractor that belonged to Gabriel Théolas and was used as the logo for the domain, is a Mogul made in 1907.
When Laurent Clapier returned to the domain, he immediately began to practice organic methods in the vineyards. Certification as agriculture biologique was achieved in 2004 and since 2011 biodynamic certification has been approved by Dementer.
In 2005 the first bottling at the domain took place
In 2008 further 20 ha were purchased. Of the 52 ha only a very small part is situated outside AOP Grignan les Adhemar.
In 2012 Laurent Clapier bought some basement areas from Cellier des Dauphins located in an old quarry in Saint Restitut and established wine cellars here and a showroom named Caves Cathedrales.

2016: 50% Grenache, 50% Syrah. 

Grignan-les-Adhémar Griffon
2014: 90% Syrah, 7% Grenache, 3% Mourvedre. 
2/3 aged in barriques for 12 months.

Grignan-les-Adhémar Rosé TO
2017: 50% Grenache, 30% Cinsault, 20% Syrah. Press direct.

Grignan-les-Adhémar Blanc Mogul
2016: 40% Roussanne, 40% Marsanne og 20% Viognier.
