In the past the fields of l'Hermitage belonged to the order of Sainte Cécile d'Estagel and it served as a hostel for pilgrims on their route to Santiago de Compostella.
The property of 100 ha was bought by Jérôme Castillon's father Michel Castillion and after having worked together with his father Jérôme is now in charge.

By the 100 ha only 80 ha are in production as the rest is resting without crop or just replanted . All the vnieyards are situated in one piece around the domain.
Mourvedre counts for an unusually big share of the planted varieties.
Jérôme Castillon says that first of all the short distance - 30 km - to the Mediterranean gives the best conditions for this variety.

2016: 50% Syrah, 30% Mourvedre, 20% Grenache.

Costières de Nimes Cuvée Sainte Cécile
2016: 45% Syrah, 45% Mourvedre og 10% Grenache
Aged in barriques - 1/3 new - for 12 months

Costières de Nimes Cuvée Edonist
2016: 50% Syrah, 50% Mourvedre. Aged for two years in  400 l barriques.

Costières de Nimes Cuvée Epicuria
2017: 100% Mourvedre. Fermentation and ageing for 12 months in wooden tank. 

Costières de Nimes Rosé Cuvée Auzan
2018: 25% Syrah, 50% Grenache og 25% Mourvedre

Costières de Nimes Rosé Cuvée Sainte Cécile
2017: 100% Mourvedre. Saignée after 48 hours and then fermentation and ageing in new barriques for 3 months

2017: 60% Roussanne, 20% Grenache Blanc, 20% Viognier.

Costières de Nimes Blanc Cuvée Sainte Cécile
2017: 70% Roussanne, 10% Grenache Blanc and 20% Viognier.
Aged for 3 months in new barriques.
