Prior to the creation of Domaine de la Ganse, Coralie worked with his parents and brother on the Domaine des Ondines.
In 2008, Coralie left the family domain with a heritage of 4.5 hectares. Together with his partner Thierry Morin, contributing two ha the couple established  EARL Onde-Morin and made the first vintage of Vacqueyras in the year 2008.
After the establishment, the domain's vineyards have grown to 9 hectares. with vines aged between 5 and 55 years. In 2015, 30-year-old vines were seeded with shots from the best Mourvedre vines.
Since 2014, the vineyards have been certified agriculture biologique.
