Supported by his parents Sebastien Vincenti bought the property in 1991. At that time he had finished his oenological education. The former owner had delivered the grapes to the cooperative and there were no cellars at the estate. 
Over the years a lot have been spent to make the cellers mor and more modern.
The domain covers 35 ha of which 28 ha are situated situated around the domain and the rest in Mormoiron. 

Since 2012 the vineyards have been certified agriculture biologique.

2019: 50% Grenache, 30% Syrah, 20% Mourvedre. 
Aged for 12 months in oval cement tanks, barriques or foudres.

Ventoux Blanc
2020: 30% Grenache Blanc, 30% Roussanne, 30% Clairette, 10% Vermentino. 

Ventoux Rosé
2020: 50% Cinsault, 30% Syrah, 20% Grenache.

Ventoux Persia
2019: 90% Syrah, 10% Mourvedre from the oldest vines of the domain. Aged in barriques or foudres for 12 months.

Ventoux Blanc Persia
2020: 100% Roussanne. 
Fermented in foudres and then matured in cement tank.

Ventoux Il était une fois...
2018: 80% Grenache planted in 1936, 10% Syrah, 10% Mourvedre.
Grenache aged in  foudres. Syrah, Mourvedre in barriques for 12 months.

Ventoux Divergente
2017: 100% Syrah planted in 1955. 
Aged for 12 months in foudres or barriques. Only made in good vintages.

Ventoux N...
2018: 30% Grenache, 30% Syrah, 30% Mourvédre, 10% Cinsault.6 months in egg tanks. No sulphits added.
